I know this recipe calls for double onion, but the shallots make the recipe. And I can hear you now: "Blackening rub? Doesn't that usually go on the outside of trout to give it a bit of a crunch?" Again, you gotta trust me on this, the blackening rub really gives this veggie burger a meaty taste, you're gonna love it.
2 Tbsp Dried Shallots 1 Tbsp Blackening Rub 1/2 cup Almond Butter* 1/4 tsp Cracked Pepper Grind 2 cans Black Beans 1/2 cup Chopped Onion
Coating: 1 cup Black Rice
Make black rice according to directions on package. Set aside to cool. Drain black beans. In a large bowl, smash black beans slightly with spoon. Make sure to leave some beans whole but most of beans should be smashed. Mix in other ingredients down to black rice. Form patties, gently press both sides into rice. Place 1 Tbsp olive oil in saute pan, turn to Med High heat. Cook about 5 minutes each side on Med - Med Low heat.
