Black Bean Millet Burgers & Spicy Bean Meanloaf

So some days you start out making one thing (Millet Burgers) and end up with a whole new thing. The Spicy Bean Meanloaf proves that being reckless in the kitchen is a good thing. You will mash up, beat up, pulverize it, and throw it against the wall to see if it is done; and all of the abuse will result in a darn good vegetarian meatloaf.

My goal with this recipe was to enable my busy moms and dads to make these burgers / meatloaf with no chopping. By throwing it all in the food processor I was sure that it would come out just right. Well… my peppers were too mushy, so a little blending and flexing and throwing in my walnut butter and then flipping the burgers in a little millet flour and bada bing! We have something that tastes glorious and is super fast. Also, the walnut butter inspired me to take it a step further and throw that bean/butter glob in a pan, sprinkle some millet flour and salsa and pasta sauce on top and call it Meanloaf.

Millet flour is naturally gluten-free, it adds mild flavor to both sweet and savory recipes. Black beans are packed with protein, fiber, folate, and potassium. Walnuts are the heart healthy nut which increases satiety in just as little as three days, helping us to maintain a healthy weight.

Black Bean Millet Burgers

1 cup cooked millet (Cook according to package instructions.) 1 bell pepper (I used 1/2 red and ½ yellow), seeded

2 cans black beans, rinsed and drained 1 Tbsp cumin 1 tsp garlic powder (or 2 cloves garlic)

1 tsp smoked paprika

1 tsp oregano 1 tsp salt 2 Tbsp squeeze cilantro (or about 1/2 cup chopped cilantro)

1/2 cup onion (about two quarters of a medium onion)

1/2 cup frozen or fresh corn kernels

2/3 cup walnut butter (make your own, recipe here)

Oil for pan frying (I used Garlic infused Olive Oil)

Make patties. Press both sides gently into the millet flour. Put in saute pan and cook slowly on Med. Low for 8 minutes.

Spicy Bean Meanloaf

Above recipe plus topping:

½ cup salsa

1 cup spaghetti sauce

3 Tbsp nutritional flakes

5 Tbsp Millet flour (blend 1/2 cup millet flour in blender until flour)

Fresh ground pepper

Place burger ingredients in a 8 1/2 x 4 1/2 x 2 3/4 in. loaf pan. Add ingredients above in order. Bake at 350 degree F for 40 min, 10 min High Broiler. Slice and enjoy! I like to serve with mashed cauliflower and corn.
